Day 16 – Turn Your Shine On

Whilst you continue to think about what is ‘What is Stopping You?’, I’m going to fulfil another request. One of our magical ladies asked for an ‘indulgent soup’. Now I know this wonderful lady is keen to stay away from the nuts, so I have a creamy and refreshing recipe which I hope that you’ll all enjoy!

Avocado Soup

Ingredients
1 avocado
1/2 small cucumber
1/2 cup of peas – frozen work well
1 small stalk of celery
Juice of 1/2 a lime
Small handful of fresh coriander (cilantro)
1 Tbs olive oil
1 cup of water – or for desired consistency
Pinch of salt
1 sundried tomato to garnish

Equipment
Blender

Directions
Place all ingredients in a blender and blend until smooth and creamy
Serve the soup and garnish with sundried tomatoes
