Raw Food Recipe: Cream of Tomato Soup

I was practicing my recipes for my upcoming Introduction to Raw Foods Class and I made the most delicious cream of mushroom soup. This got me thinking that it must be easy to switch a few ingredients around and create other ‘cream of…’ soups. So here’s my first one – Cream of Tomato Soup.

This recipe is super rich and very satisfying, perfect if you fancy some comforting on a chilly day, or some sunshine for your belly.

Ingredients
1 cup of cashews – soaked for at least 30 minutes
1 cup of water – or for desired consistency, 1 cup creates quite a thick soup – just how I like it!
1 1/2 cups of tomatoes (I used cherry and plum tomatoes)
8 sundried tomatoes - soaked for at least 30 minutes
A pinch of salt and pepper to taste (optional)

Equipment
Blender – a high powered blender creates a more creamy soup

Directions
Place all ingredients in the blender and blend until creamy

Juicy Tip
If you want a warmer soup, you can use warm water in the recipe, or if you have a high powered blender  you can leave it running until the soup is warm

Raw Food Recipe: Soup – Pear and Watercress Soup

This soup is light and refreshing and very satisfying.

Ingredients
2 conference pears
2 cups of watercress
1 avocado
1 small handful of walnuts
Water for desired consistency

Equipment
Blender

Directions
Place all ingredients in the blender and blend until smooth

Juicy Tip
If you prefer your soup warm, use warm water when blending
