Bristol Vegfest: Raw Food Demo

I recently attended vegfest – Europe’s larges veggie and vegan festival, it was fantastic – music, comedy and of course lots of food! I was especially pleased to see raw food stalls at the event.

I was there to do my first ever raw food cookery demo. Although I have done many raw food classes, the idea of doing a food demo seemed very different…

I have to say that I was unsure of how many people would turn up but was delighted to find that there was standing room only!

Raw Christmas Recipes For You

This is one of my favourite times of the year and not least because of all of the delicious food that is around!

One of my favourite foods used to be mince pies. But just because you want to increase the raw food in your diet doesn’t mean that you should miss out!

Raw Food Recipe: Delicious UnCook Stir fry

This is a really quick recipe to put together and lasts for several days in your fridge. In fact the longer you can leave it the better it tastes and the more ‘cooked’ it tastes.

Ingredients
2 cups of broccoli cut into bite sized pieces
1 red pepper finely sliced
1 cup of bean sprouts
1 head of bok choy shredded
½ cup of shredded savoy cabbage
1/4 red onion finely sliced
1 clove of garlic finely chopped

Marinade
Ingredients
½ cup of olive oil
1 Tbsp of seasame oil
Juice of ½ a lemon
1 Tbsp of wheat free tamari
Ginger to taste
Favourite spices to taste

Directions
Place the vegetables in the marinade and leave for several hours.

Rice
Ingredients
Choose from cauliflower, sweet potato or yellow squash.

Directions
Place chosen ingredient in a food processor and pulse in to small pieces, this will resemble
rice.

Assembly Directions
Drain off excess marinade from the vegetables and serve over the ‘rice’.

Juicy Tip
The longer you leave the vegetables in the marinade the softer they will become.

Raw Food Recipe: Savoury Walnuts

This recipe is perfect for a snack or for a topping on your favourite salad

Ingredients
1 ½ cups of walnuts
1 Tbsp of garam masala
1 Tbsp of tamari

Equipment
Food processor

Directions
Place all ingredients in a food processor and pulse
Ensure the ingredients are well mixed, but that the walnuts remain chunky
Store in an air tight container in the fridge

Juicy Tip
This mixture is particularly food with avocado

Raw Food Recipe: Raw Alfredo

This is a raw twist on a classic dish. It is succulent, creamy and very tasty!

Ingredients
2 courgettes (zucchini)
1 cup of cashews
6 Tbsp sunflower oil
2 Tbsp nutritional yeast
1/2 Tbsp of Bragg Liquid Aminos
¼ Cup of water
½ cup of walnuts
Salt and pepper to taste
  
Equipment
Vegetable peeler
Food processor
 
Directions
For the ‘pasta’
Peel the courgettes
Use the peeler to make strips from the flesh of the courgette
For the sauce
Add all ingredients, except the walnuts, to the food processor and blend until smooth
Add the water slowly, until you get your desired consistency
Then stir through the walnuts
Pour over the ‘pasta’ and mix thoroughly
 
Juicy Tip
For a richer sauce you can replace the cashew nuts for macadamia nuts

Raw Food Recipe: Juice – Warming Orange and Carrot

Warming Carrot and Orange Juice

 

The addition of ginger to to the classic combination of carrot and orange juice is particularly tasty when you are feeling in the need of some warmth

To make this delicious juice, you will need: 

Ingredients
3 Carrots
2 Oranges
1 Apple
0.5-1″ of ginger (or to taste) 

Equipment
Juicer 

Place all ingredients through a juicer and serve… 

Delicious! 

Helps to know
Ginger has a very distinctive flavour and when I make this recipe I make sure that I put the ginger through the juicer before the final ingredient to make sure I get the most flavour.
Ginger  is well known for its antibacterial properties

Juicy Tip
Using warming spices such as ginger can warm you up on cold days and can help subside cravings for cooked foods.

Raw Food Recipe: Juice – Tomato Power

This juice is incredibly tasty, especially if you include the basil.   

Ingredients for Tomato Power Punch

Ingredients 
4 Tomatoes
1 Carrot
2 Sticks of celery
Juice of half a lemon
Handful of basil

Equipment
Juicer  

Put all ingredients through the juicer and serve.

Helps to know
This is a really good juice to have at lunch time, as it is a salad in a glass.

Juicy Tip
Tomato and basil are a classic combination, however you could replace it with another green such as spinach or romaine lettuce for a completely different taste.

Nut Mylk, quick, easy and delicious

For years I have never really liked milk – the whole idea of drinking baby food for another animal just never really appealed… 

I put off making my own nut mylk for ages as I thought it would be a time consuming process but actually it’s ready in minutes and you can have fun with the leftovers…. 

Ingredients   1 cup of almonds – preferably soaked but not essential 
2 cups of water 

Can you see the difference soaking makes?

*2 dates – optional, if you like a sweeter taste 

Equipment
Blender 
Nut mylk bag or similar cloth suitable for straining

Instructions
Place all  ingredients in the blender and blend…
Place the nut milk bag over the container that you want the mylk stored in
Transfer blended liquid into the nut mylk bag and squeeze the mylk out of the bag 

Helps to know
I have used almonds but hazlenuts and brazil nuts work just as well.
If you add in a cup of strawberries you have a delicious mylk shake… mmm…  

Juicy Tip
In the mylk bag, after straining you will be left with the almond pulp. This makes an excellent exfoliant. With my pulp I made three simple body scrubs that were in fact not only good enough, but safe enough to eat…
  1. The almond pulp by itself was a really good and firm exfoliant
  2. The almond pulp with coconut oil was a gentler exfolaint, but as you can imagine, left my skin super soft
  3. The almond pulp, coconut oil and mashed banana, was gorgeous on my face, leaving it lovely and soft and it didn’t taste too bad either!!

Raw Food Recipe: Crunchy Coleslaw

This coleslaw is great on its own or the perfect accompaniment to another dish. 

Ingredients for Crunchy Coleslaw

Ingredients
1/2 a red cabbage
2 carrots
1/4 red onion
1/4 cup of raisins
1/4 cup of pieces of walnuts
Juice of 1/2 lemon
Cold pressed olive oil 

Equipment
Sharp knife
Julienne slicer 
Mixing bowl 

Crunchy Coleslaw

Directions
Cut the red cabbage and red onion into thin strips
Use the julienne slicer to create very thin strips of carrots
Place all ingredients in a bowl and mix well

Helps to know
You could of course use white cabbage in this recipe, but I think the contrast of the red and orange just looks stunning

Juicy Tip
If you fancy extra bursts of sweetness in this recipe, you could add some diced apple for a refreshing treat for your tastebuds
