Raw Food Recipe: Cream of Tomato Soup

I was practicing my recipes for my upcoming Introduction to Raw Foods Class and I made the most delicious cream of mushroom soup. This got me thinking that it must be easy to switch a few ingredients around and create other ‘cream of…’ soups. So here’s my first one – Cream of Tomato Soup.

This recipe is super rich and very satisfying, perfect if you fancy some comforting on a chilly day, or some sunshine for your belly.

Ingredients
1 cup of cashews – soaked for at least 30 minutes
1 cup of water – or for desired consistency, 1 cup creates quite a thick soup – just how I like it!
1 1/2 cups of tomatoes (I used cherry and plum tomatoes)
8 sundried tomatoes - soaked for at least 30 minutes
A pinch of salt and pepper to taste (optional)

Equipment
Blender – a high powered blender creates a more creamy soup

Directions
Place all ingredients in the blender and blend until creamy

Juicy Tip
If you want a warmer soup, you can use warm water in the recipe, or if you have a high powered blender  you can leave it running until the soup is warm

Raw Food Recipe: Soup – Pear and Watercress Soup

This soup is light and refreshing and very satisfying.

Ingredients
2 conference pears
2 cups of watercress
1 avocado
1 small handful of walnuts
Water for desired consistency

Equipment
Blender

Directions
Place all ingredients in the blender and blend until smooth

Juicy Tip
If you prefer your soup warm, use warm water when blending

Raw Food Recipe: Raw Alfredo

This is a raw twist on a classic dish. It is succulent, creamy and very tasty!

Ingredients
2 courgettes (zucchini)
1 cup of cashews
6 Tbsp sunflower oil
2 Tbsp nutritional yeast
1/2 Tbsp of Bragg Liquid Aminos
¼ Cup of water
½ cup of walnuts
Salt and pepper to taste
  
Equipment
Vegetable peeler
Food processor
 
Directions
For the ‘pasta’
Peel the courgettes
Use the peeler to make strips from the flesh of the courgette
For the sauce
Add all ingredients, except the walnuts, to the food processor and blend until smooth
Add the water slowly, until you get your desired consistency
Then stir through the walnuts
Pour over the ‘pasta’ and mix thoroughly
 
Juicy Tip
For a richer sauce you can replace the cashew nuts for macadamia nuts

Raw Food Recipe: Vegetable Wraps

Ingredients for vegetable wraps

These wraps are quick and easy, deliciously crunchy and perfect for lunch.

Ingredients 
Large romaine lettuce leaves
1 courgette
1 carrot
1 red bell pepper
1/4 red onion

Equipment
Sharp knife 0r
Grater 0r
Julienne slicer

Thinly sliced vegetables

Directions
Cut the ingredients for the filling into very thin slices; use a julienne slicer if you have one
Layer the sliced vegetables onto the romaine lettuce leaves and wrap    

Helps to know
The larger the lettuce leaves the easier they are to turn in to wraps.

Juicy Tip
If you would like your vegetables to be softer, so they appear cooked, marinate them in the following:

  • ¼ cup of olive oil
  • ¼ cup of wheat free tamari
  • 1 Tbsp ground coriander
  • 1 Tbsp of ground coriander

Leave the vegetables to marinate for several hours. The longer they are left the softer they become.
