Raw Food Recipe: Strawberries and Green Super Cheesecake
This cheesecake not only looks fantastic but tastes delicious too
And with the addition of the superfoods: SuperGreens and Purple Corn Extract it’s extra good for you too!

Ingredients
Base
1 ½ cups of desiccated coconut
½ cup of melted coconut oil
½ cup of ground cashews
2 Tbsp of sweetener/syrup
1-2 Tbsp of SuperGreens powder
Pinch of salt
Topping
1 ½ cups of cashews soaked for 2 hours
½ cup of water
1 cup of fresh strawberries
½ cup of coconut oil
¼ cup of sweetener/syrup (or for desired sweetness)
1 Tbsp Purple Corn Extract
Pinch of salt
Equipment
Food processor
8 inch spring form cake tin
Blender

Directions
Base
Place all ingredients in the food processor and process until the mixture is well combined
Press into the base of a 8 inch spring form cake tin
Place a layer of thinly sliced strawberries over the base
Place in the fridge to chill until the topping is ready
Topping
Place all of the ingredients, apart from the oil, into the blender and blend until smooth and creamy
Add in the oil and blend until well combined
Assembly
Pour the topping onto the base
Top with some desiccated coconut
Place in the fridge for 6 hours or the freezer for 2 hours to set
Remove from the freezer 15 minutes before enjoying

Raw Food Recipe: Strawberry Valentine Cake
This is a really decadent cake that is perfect to share with someone you love…

Ingredients
Cake
3 cups of ground almonds
8 -10 pitted medjool dates
½ tsp of vanilla extract
Pinch of salt
2 tsp of water
Strawberry Cream
½ cup of soaked cashews
¼ cup of melted coconut oil
½ cup of fresh strawberries
2 Tbsp of water (or for the desired consistency)
1 Tbsp of sweetener
1 tsp of vanilla extract
Frosting
Strawberry Cream
½ cup of soaked cashews
¼ cup of melted coconut oil
2 Tbsp of water (or for the desired consistency)
1 Tbsp of sweetener
1 tsp of vanilla extract
Filling
Halved strawberries
Equipment
Food processor
Blender
7 inch spring form cake tin

Directions
Cake
Place the ingredients, except the water, in the food processor and process until the mixture becomes sticky and binds together
add the water if needed to help bind the mixture
Strawberry Cream
Place all the ingredients in a blender and blend until smooth and creamy
Frosting
Place all the ingredients in a blender and blend until smooth and creamy
Assembly
Take half of the cake mixture and press it into the base of the cake tin
Place the strawberry cream on top of the cake mixture
Then top with a layer of fresh strawberries
Place in the fridge so the cream can firm up for about 30 minutes
Then cover with the rest of the cake mixture
Remove the cake from the cake tin and finish by covering the cake with the frosting
Raw Food Recipe: Desserts – Knickerbocker Glory
When I was younger, much younger, my sister and I used to go to a cafe down the road and enjoy a Knickerbocker Glory. It felt like such a treat!

A traditional Knickerbocker Glory (where did that name come from?…) contains layers of ice-cream, fruit and more cream. Obviously a dieters nightmare…
However today’s recipe is not only delicious and indulgent, but it is surprising good for you (don’t tell anyone, they mighty not try it…)
Raw Knickerbocker Glory
Ingredients
Chia Pudding
2 cups of almond milk
4 Tbps chia seeds
2 bananas
1 cup of raspberries
1 tsp cacao powder
Cashew Cream
1 cup of cashews – soaked for at least 30 mins
½ cup melted coconut oil
1 Tbs vanilla extract
2 Tbs agave
3 Tbs water – or for desired consistency
Fruit Layers
Fruit of your choice – I like pineapple and raspberries
Equipment
Blender
A tall glass
Directions
Chocolate Chia Pudding
Blend 2 cups of almond milk with a banana and 1 tsp of cacao powder
Stir in 2 Tbsp of chia seeds into the chocolate milk and leave to ‘thicken’ in the fridge for two hours
Raspberry Chia Pudding
Blend 2 cups of almond milk with a banana and 1 cup of raspberries
Stir in 2 Tbsp of chia seeds into the chocolate milk and leave to ‘thicken’ in the fridge for two hours
Cashew Cream
Place all ingredients in a blender and blend until smooth and creamy
Assembly
Place some pineapple in the bottom of your glass
Add a layer of cream
Next add a layer of raspberry chia pudding
Follow with a layer of raspberries
Add a layer of cream
Next add a layer of chocolate chia pudding
Follow with a layer of raspberries
Finish with a layer of cream
Then sit back and admire the beauty of your creation and then indulge your senses and enjoy!

Raw Food Recipe: Raw Carrot Cake
Carrot cake is one of my all time favourite cakes, so it is of course only natural to want to create a raw version and this does not disappoint.

The recipe takes about 20 minutes to make and is the perfect way to use up the pulp you have after juicing your carrots.
Ingredients
Cake
1 cups of walnuts
8 pitted medjool dates
2 cups of carrot pulp (left from juicing) – If you don’t have a juicer, you can grate the carrots but you will have to squeeze as much juice out as you can
1/2 cup of dessicated coconut
2 Tbs of carrot juice
1 tsp of vanilla extract
1 tsp of cinnamon
Pinch of salt
2 tsp of water
Icing
1/2 cup of cashews (soaked for at least 20 minutes)
1/4 cup of water
2 Tablespoons of melted coconut oil
Juice of half a lemon
1 tsp lemon extract
Equipment
Food processor
Blender
Directions
Cake
Place the walnuts, dates, saltand vanilla extract in to the food processer and process until the mixture begins to stick together
Place the mixture in a bowl and add the rest of the ingredients and stir well
Mould the mixture into the shape that you require
Icing
Blend all ingredients togther until smooth and creamy
Layer the cake with the icing

Raw Food Recipe: Double Chocolate Dream
I created this recipe for my sweetheart – I hope you enjoy it as much as he did!

Ingredients
For the base
1 ½ cups of walnuts
8 pitted medjool dates
1/3 cup of cacao or carob powder
½ tsp of vanilla extract
Pinch of salt
2 tsp of water
For the chocolate topping
2 cups cashews
½ cup melted coconut oil
½ cup sweetener (agave, maple syrup, honey)
½ cup water
2 tsp vanilla
3/4 cup raw cacao powder
Equipment
Food processor
Blender
Cake mould(s)
Directions
For the base
Place the walnuts in the food processor and process into small chunks
Add the salt to the chopped walnuts and process until finely ground
Add the dates and process until the mixture becomes sticky
Add the cacao or carob and vanilla and process
Add the water if needed
Place the mixture into the cake mould and place to one side
For the topping
Add the ingredients to your blender and blend until smooth and creamy
Pour the mixture over the base and place in the freezer to set
Juicy Tip
Decorate with fresh strawberries, nuts or raw chocolates

Raw Food Recipe: Raw chocolates
Today I had my first attempt at making raw chocolates. To be honest it was a lot easier than I expected!

White Chocolate
Ingredients
1/2 cup of ground cashews
1/2 cup of melted cacao butter
1/4 cup of sweetener (agave/maple syrup/honey)
Equipment
Blender
Chocolate moulds
Directions
Blend all ingredients until very smooth
Add to your chocolate moulds
Place in the freezer for 30 minutes to harden
Take out of moulds and place in the fridge
For tastiest chocolate enjoy at room temperature

Dark Chocolate
Ingredients
1/2 cup of cacao powder
1/2 cup of melted coconut oil
1/4 cup of sweetener (agave, maple syrup, honey)
Equipment
Whisk
Chocolate moulds
Directions
Add the ingredients to a bowl and whisk well
Add to your chocolate moulds
Place in the freezer for 30 minutes to harden
Take out of moulds and place in the fridge
For tastiest chocolate enjoy at room temperature
Juicy Tip
To create tasty combinations you could:
Add some cacao nibs or chopped nuts to your chocolate
Place some cacao nibs or chopped nuts to the moulds before you add the chocolate
Half fill the moulds with white chocolate and then fill with dark chocolate for two tone chocolate

Raw Food Recipe: Chocolate and Coconut Bliss Balls
This recipe is perfect when you are in need of some delicious chocolate gooeyness – Yum!

Ingredients
1 ½ cups of walnuts
8 pitted medjool dates
1/3 cup of cacao or carob powder
½ tsp of vanilla extract
Pinch of salt
2 tsp of water
Dessicated coconut to roll the balls in
Equipment
Food processor
Directions
Place the walnuts and salt in the food processor and process until finely ground
Add the dates and process until the mixture becomes sticky
Add the cacao or carob and vanilla and process
Add the water if needed
Mould into round balls and roll in the coconut
Store in the fridge until required
Juicy tip
If you don’t have any dates, you can replace with 1 cup of raisins

Raw Food Recipe: Chocolate Mousse
This is a deliciously creamy dessert that will satisfy any sweet tooth
Ingredients
2 cups of cashews
½ cup of agave syrup
1/3 cup of cacao or carob powder
1 Tbsp of coconut oil
1 Tbsp of vanilla extract
Pinch of salt
½ – 1 cup of water
Equipment
Blender
Directions
Place all ingredients in the blender and blend until completely smooth
Pour into glass serving containers and refrigerate until set
Juicy tip
To create a frozen dessert instead of a mousse, place the mousse in the freezer and remove 5 minutes before serving.
Raw Food Recipe: Raw Lemon Tarts
My husband was after some jam tarts, so this got me thinking about a raw version. However I am a fan of the refreshing tastes of lemon, so he got an unexpected twist…
Ingredients
The Base
2 ½ cups of walnuts
½ cup of shredded coconut
12 pitted medjool dates chopped
2 Tbs of vanilla extract
Pinch of salt
The Filling
1/3 cup ground cashews
2 bananas
¼ cup of lemon juice
2 Tbs coconut oil
2 Tbs agave
Pinch of salt
Equipment
Food processor
Blender
Cup cake cases
Muffin tray
Directions
For the base
Place the walnuts, coconut, vanilla extract and salt in the food processor and process until fine, but be sure not to over process.
Add in the chopped dates and process until the mixture becomes sticky
Place the mixture in the cup cake cases and press the mixture firmly into the sides of the muffin tray, ensuring there is a space in the middle for the lemon filling.
For the lemon filling
Place all the ingredients into a blender and blend until smooth and creamy
Assembling the tarts
Add the lemon filling to the bases
Place in the tarts in the fridge for several hours to firm up
Makes 9 lemon tarts
These tarts will last in the fridge for several days
Good to know
If you don’t have any dates, you could use ¾ cup of raisins
Juicy Tip
Replacing the walnuts with pecans creates a lovely variation on this recipe
Raw Food Recipe: Chocolate Brownies
These raw chocolate brownies are just as sticky, chewy and delicious as the real thing, except these are guilt free (well alomost). Best of all they only take abround 10 minutes to make – what are you waiting for?
Ingredients
1 ½ cups of walnuts
8 pitted medjool dates
1/3 cup of cacao or carob powder
½ tsp of vanilla extract
Pinch of salt
2 tsp of water
Equipment
Food processor
Directions
Place the walnuts in the food processor and process into small chunks
Remove ¼ cup of walnuts and put to the side
Add the salt to the chopped walnuts and process until finely ground
Add the dates and process until the mixture becomes sticky
Add the cacao or carob and vanilla and process
Add the water if needed
Add in the remaining walnuts and stir through the mixture
Mould into the desired shape and store in the fridge until required
Juicy tip
If you don’t have any dates, you can replace with 1 cup of raisins
