Raw Food Recipe – Raw Creme Eggs

Here’s a raw chocolate treat for Easter or for those who have a sweet tooth…

Ingredients
Chocolate
½ cup of melted coconut oil or cacao butter
½ cup of cacao powder
¼ cup agave syrup
Pinch salt
Creme Filling
1 cup of cashew nuts
2 Tbsp of melted coconut butter
2 Tbsp of agave syrup
1 tsp of vanilla extrtact
Yolk
Creme filling
1 Tbsp nut butter

Equipment
Whisk
Chocolate egg moulds
Blender

Directions
Chocolate
Mix all the ingredients together with a whisk
Creme
Blend the ingredients together, until smooth and creamy
Yolk
Blend the creme and the nut butter together

Assembly
Coat the moulds with the chocolate and place in the freezer to set – you may have to do several layers to get the right thickness
Fill with the creme
Add the yolk
Place in the freezer for 10-20 minutes
The middle should still be slightly soft – press two halves together and place in the freezer to set completely

Raw Food Recipe: White Chocolate Caramels

These chocolates are a really sweet and creamy treat – perfect for anyone with a sweet tooth

When you make this recipe be sure to hide some in your freezer, or you’ll come to have one yourself and another member of your household will have eaten them for you… I’m mentioning no names… But just saying…

White Chocolate Caramels

Ingredients
Chocolate
1 cup of ground cashews
½ cup of melted cacao butter
¼ agave syrup
Pinch salt
Caramel
½ cup of melted coconut oil
1/3 cup almond butter
½ cup agave syrup
1 tsp vanilla extract
1 tsp lucuma powder (optional)
Pinch of salt

Equipment
Food processor/blender
Squeezy bottle with small nozzle
Chocolate moulds

Directions
Chocolate
Mix all the ingredients together with a whisk
Caramel
Blend all ingredients together until smooth
Place the caramel in the squeezy bottle

Assembly
Pour the chocolate into the mould and fill ¾ full
Put the nozzle of the caramel container into the liquid chocolate and squeeze a small amount of caramel into the chocolate
Place in the freezer to set
Enjoy at room temperature

Raw Food Recipe – Raw ‘Bounty’ Bars

Still on my mission to prove that you don’t have to feel as if you are missing out by choosing to be healthy I have created a raw ‘Bounty’ bar.

If you’re not familiar with Bounty’s they are a chocolate bar that has a delicious coconut filling.

This recipe is very close to the real thing – but only better! As it comes without the stuff you want to avoid if you want to increase your health and your Shine!

Ingredients
Filling
1 cup of dates soaked for 20 minutes
½ cup of water
3 cup of desiccated coconut
¼ cup melted coconut oil
3 Tbs ground cashews
1 tsp vanilla extract
Pinch of salt
Chocolate
½ cup of melted coconut oil
½ cup of cacao powder
¼ agave syrup
Pinch salt

Equipment
Food processor
Whisk

Directions
Filling
Blend the dates and water to make a date paste
Add in the rest of the ingredients and process until well combined
Shape the mixture into desired shape
Place in the fridge for at least two hours
Chocolate
Mix all the ingredients together with a whisk

Assembly
Place the firm coconut shape on a fork and place in the chocolate sauce
Remove from the chocolate and place on a non-stick sheet or grease proof paper
Place in the fridge until the chocolate has set

Raw Food Recipe: Raw ‘Rolos’

I’ve heard so many people recently talking about how a vegan diet or raw food diet is limiting and  how people couldn’t live without this food or that food – and I have to say that I just don’t agree.

I think a vegan diet and raw food diet are full of abundance, colour and life – nothing limiting about that!

So I have set out on a mission to recreate old favourites and to show that when you choose health and compassion you don’t have to compromise.

So I set to work in my kitchen and I’ve created something that I know you are going to love!!

Here is my version of Raw Rolos – I hope you enjoy them!

Ingredients
Chocolate
½ cup of melted coconut oil
½ cup of cacao powder
¼ agave syrup
Pinch salt
Caramel
½ cup of melted coconut oil
1/3 cup almond butter
½ cup agave syrup
1 tsp vanilla extract
1 tsp lucuma powder (optional)
Pinch of salt

Equipment
Food processor/blender

Chocolate moulds

Raw Food Recipe – Chocolate Topped Granola Bars

I was out recently and found myself looking at the snack aisle in a health food shop.

I saw a bar that I liked the look at and decided I could make a raw food version, so here it is and I have to say that it has gone down so well in my house that it’s nearly all gone. So if you make some, be sure to keep a secret stash away from snacking family members…

Ingredients
Granola

1 cup sunflower seeds – soaked for 2 hours
1 cup pumpkin seeds – soaked for 2 hours
1/2 cup of sesame seeds
1 cup of date paste

Raw Chocolate Topping
1/2 cup of melted coconut oil
1/2 cup of agave
1/2 cup of carob or cacao powder

Equipment
Dehydrator

Directions
Granola

Place the seeds in a food processor and chop briefly
Place seed mixture in a large bowl
Add the date paste and mix thoroughly
Spread the mixture evenly on a parafex sheet – About 1/4 inch thick
Dehydrate for 5 hours and then peel off the sheet and place on the mesh dehydrator tray for another 5 – 6 hours until as crunchy as you like

Raw Chocolate Topping
Place all the ingredients in a bowl and whisk together

Assembly
Spread the chocolate mixture on top of the granola and place in the fridge until firm
Cut in to the size pieces that you want  - Enjoy!

Soak the seeds for 2 hours

Make your date paste
(8 dates soaked and blended in one cup of water)

Mix the date paste and seeds together

Spread the mixture on a paraflex sheet and dehydrate

Enjoy as it is…

…Or top with chocolate

Raw Food Recipe: Smoothie – Raspberry Chocolate Pudding

Ingredients for Chocolate and Raspberry Pudding

This recipe is perfect for when you want to feel really indulgent

Ingredients 
2 bananas
1 cup of raspberries
Large handful of rocket
1-2 Tbsp of cacao or carob powder

Equipment
Blender

Directions
Place the ingredients in the blender and blend until smooth.
 
Helps to know
The rocket not only provides an excellent source of goodness to the recipe, but the peppery nature of the green makes a delicious addition to the pudding which works surprising well, creating a very tasty recipe with a kick.

Juicy Tip
If you use frozen raspberries it will have a creamier, more frozen pudding, texture.

Raw Food Recipe: Smoothie – Raw Hot Chocolate

Ingredients for Raw Hot Chocolate

This drink is the perfect ‘upgrade’ to traditional hot chocolate for cold winter nights

Ingredients 
2 bananas
1/2 Tbsp of cacao or carob powder
1 Tbsp of mesquite powder
2 – 3 dates if you like a sweeter taste
Warm water for desired consistency

Equipment
Blender

Directions
Place the ingredients in the blender and blend until smooth.
 
Helps to know
If you have a high powered blender, leave running for a few minutes for extra warmth.

Juicy Tip
If you do not have mesquite powder, you could add a sprinkling of cinnamon for a lovely flavour.
